Intel CPU's are simply superior yes, but also more expensive... For SG (and probably lots of other games these days) you want at least 3 cores, which makes a 6 core AMD FX (which is basically the equivalent of 3 Intel cores) a better choice than a dual core Intel i3 in the same price bracket.

Like, Sui Generis will probably be lighter on your hardware than, say, The Witcher 3

It will depend on what you mean by "do the trick"? I'm sure SG will run on such a setup - BM have always said that SG can run on outdated laptops (and the specs you quote are not underpowered). However, if you want to get the best out of it and run it using high graphics settings then that's another question.
Screen resolution is the other important factor to consider. More pixels = more power required.
Brendan has always said that the most important spec for SG when looking at graphics cards is the pixel fillrate. I noted that the 765m has a low-ish fillrate of 13.6. This is much lower than some of the better desktop cards (even old ones), which might have a fillrate more in the 30-40 range. What sort of an impact low fillrate actually has on SG is a good question for @Brendan.

Thanks for the responses, guys. All this Sui Generis excitement has coincided with me being about to purchase a new PC/Laptop, so I'm making sure I can get the best SG experience possible. Still haven't decided on desktop vs. laptop though.
EDIT: Also what's all this about 32bit only? Does that mean if I have 64bit windows installed, I won't be able to play SG?

You can run both 32bit and 64bit applications on Windows 64bit.

@Rob explained it well. That laptop spec sounds good and it will run SG fine, not on max settings but the experience will definitely be there. The 765m is the equivalent of a desktop 650 Ti which isn't bad by any means, just bear in mind that a (very) high end desktop card like a 580/680/780 is still ~3x faster.
Personally, I'm more of a desktop guy as I prefer the bigger/better screen and extra performance you get for the money. But then I'm well fussy, don't travel a lot, and don't bother gaming when I do

Ya and I found the insider forum after I upgraded and found a lot more info so I guess the discussions have moved over there. I didn't go for the new videos but the discussions are good. I'm still waiting for the wife to give me the eye.... Spending more on video games again I see !!! 8)

Fully customizable, extremely good bang for the buck. I have this laptop myself and ordered it from the same page (although with different specs).
With these specs:
CPU: i7-4710MQ
RAM: 8gb 1600mhz kingston
GPU: AMD M290X
HDD: 500GB 7200rpm Western Digital
The price is 1109 Euros (1159 with shipping for me since I live in Sweden) which is pretty much unbeatable for the specs you get. Build quality is great and so is the cooling. Only gripe I have with it is the touch pad which is kinda meh.
You might want to upgrade the GPU to a 870M from Nvidia for about 70 euros, it probably runs cooler and has slightly better performance. I totally recommend getting an SSD too if you have the cash.
Oh and if you live in the US you can get it even cheaper from other stores there.

It has some impressive things such as the 3x RAID 0 128gb SSDs and a great CPU
I'm not sure whether SLI is worth the hassle though. 2x 860M are roughly the same as an 880M in the games where SLI is supported. It looks pretty thin which is cool even though it's 17 inches.
For that kind of money you could get an absolute beast though:

I would probably go for the 15 inch one with a 880m if I were you though and get some really nice SSD (or two because there's room for another, just make sure to select HDD caddy in the DVD/Blu ray section). Honestly the CPU isn't all that important, especially for gaming. I doubt you would even notice any difference between an i7-4710MQ and a i7-4940MX which is the best one. Nor is RAM. 8gb is just fine unless you do lots of video editing or use stuff like virtualbox heavily.
Oh and remember to select the "No operating system" option if you want to save ~100 euros and instead dl it from tpb and install from a usb stick. Also the nice thing about these is that you can upgrade them later on, CPU, GPU, harddrive, ram, even display.
You should check out the benchmarks for different games to see how well different gpus perform:

I do prefer the 17 inch one, I've always used a tiny screen and I want to treat myself this time round. What options would you have me pick if I wanted the absolute best I could get (and money isn't an issue), but at the same time not have the fans go crazy?

Yeah don't get SLI, you can't rely on it working at all and an 880M is basically twice as fast as an 860M in raw performance anyway, definitely a much better choice.
As @Pilluminati said the very high end CPU's just aren't worth it in terms of price/performance, you're generally best off getting the lowest clock speed version of the best architecture, which right now means any i7-47xxxx.
Those Pcspecialist laptops are good bang for buck, not a bad choice for sure and seems like the best spec/value for a high end 15" but I'm not sure what the generic chassis will be like in terms of cooling/noise. The 880M will produce a similar amount of heat to Pillumati's M290X, so maybe he could give you an idea!
Seeing as you want a 17" screen anyway another good choice is the Asus G750JZ, it's a similar spec/price with great cooling.
